Sweet Potato Fritters with Buffalo Chicken

- Sweet Potatoes (4 medium)
- 1/4 c Sweet Corn
- 1/4 c Chopped Cilantro
- 1/4 c Chopped Green Onions
- 1/4 c Corn Meal
- 1/2-3/4 c Bread Crumbs
- 1 egg
- Dash of Cayenne Pepper
- Salt and Pepper to taste
- 2-4 TB Coconut Oil
Bake up potatoes in oven or microwave in potato bag. Link for one on amazon to the right.
Remove once cooked. Remove peels and mash up in bowl
Add ingredients, leave some cilantro for garnish- corn, corn meal, bread crumbs, egg, green onion, cilantro, salt, pepper, and cayenne.
Place in fridge for an hour.
After an hour take out and make patties out of potato mixture. use about a 1/4 c per patty.
Heat coconut oil on skillet on medium to medium/high heat.
Test to see if skillet is hot enough by placing a few drops of water in pan. If it sizzles- it's ready to go.
Place 4 patties at a time on skillet. Cook each side for about 4 minutes. Always check to see if it's burning once or twice. Every stove top is a bit different. Flip once side is nice and brown.
Once both sides are brown, remove from heat and place on paper towel. You may need to add more coconut oil to pan for 2nd batch.
