Super Food Shrimp Salad

 

This salad contains all things yummy and good for you! Ready to eat in 15 minutes or less.

 
 

Recipe

Serves 4

Ingredients-

  • 1 lb cooked shrimp
  • 1/2 Red Pepper
  • 1/2  Cucumber
  • 1 Avocado
  • 1/2 c Pomegranate seeds 
  • 1/2 Red Onion
  • 4 handfuls mixed greens
  • Dressing
    • 1 TB Dijon Mustard
    • 1/4 c Olive Oil
    • 1/4 c White Wine Vinegar
    • Juice from 1 squeezed Lemon
    • 2 cloves Garlic
    • 1/2 tsp fresh or dried dill
    • 1/2 tsp dried oregano
    • Salt and Pepper

Directions-

Mix all ingredients for dressing together in a small mason jar. Shake up.

Mix up all veggie ingredients and top with shrimp and dressing.
